How to Make Delicious Bakso

Bakso is one of Indonesia's most beloved dishes. It consists of springy beef meatballs served in a bowl of hot, savory broth. From street carts to restaurants, bakso is everywhere and is a true comfort food that warms you up. The good news is that you can make delicious bakso at home with simple ingredients. The keys are cold meat, the right starch, and proper technique to achieve that signature bouncy texture.

Here is a complete recipe for about 4 servings.

Bahan-bahan (Ingredients)

For the meatballs:

  • 500 g ground beef (choose a slightly fatty cut, such as brisket)
  • 100 g tapioca starch (sagu)
  • 4 cloves garlic, minced
  • 1 teaspoon ground white pepper
  • 1.5 teaspoons salt
  • 1 egg white
  • 100 ml ice water (with a few ice cubes)

For the broth:

  • 1 kg beef bones or rib bones
  • 2 liters water
  • 4 cloves garlic, crushed
  • 1 onion, halved
  • 2 teaspoons salt (adjust to taste)
  • 1/2 teaspoon ground pepper

For serving:

  • Bihun (thin rice vermicelli) or kwetiau, soaked until soft
  • Green mustard or bean sprouts, briefly blanched
  • Spring onion and celery, finely sliced
  • Fried shallots
  • Sambal (chili paste), kecap manis (sweet soy sauce), and vinegar to taste

Cara Membuat (Method)

  1. Make the broth first. Boil the beef bones in 2 liters of water. Skim off the foam that rises to keep the broth clear. Add garlic, onion, salt, and pepper. Simmer over low heat for 1 to 1.5 hours until the broth is savory.

  2. Blend the dough. Place the still-cold ground beef in a food processor with the garlic, pepper, and salt. Process until smooth. Add the egg white and ice water gradually while processing. The ice water is essential to keep the mixture cold so the meatballs turn out springy.

  3. Add the starch. Add the tapioca starch and process only briefly until the mixture is evenly combined and sticky. Do not overprocess, or the meatballs will be tough.

  4. Shape the balls. Bring a pot of water to a boil, then lower the heat so the water only moves gently (not a rolling boil). Take the dough with a wet hand, squeeze it out between your thumb and forefinger, and scoop it off with a wet spoon. Drop it into the water.

  5. Cook the meatballs. Let the meatballs cook. They will float to the surface when done. Once they float, cook for another 2 to 3 minutes, then remove and drain.

  6. Serve. Arrange bihun, mustard greens, and bean sprouts in a bowl. Add a few meatballs, then ladle over the hot broth. Sprinkle with spring onion, celery, and fried shallots. Serve with sambal, kecap manis, and vinegar to taste.

Tips

  • Make sure the meat and water are truly cold. Low temperatures help the meat proteins bind well, giving the meatballs their springy, bouncy texture.
  • Process the dough until it is fully smooth and sticky, but do not overdo it, or the meatballs will be hard.
  • Cook the meatballs in gently moving water, not a hard boil, so their surface stays smooth and they do not break apart.
  • Taste the broth before serving and adjust the salt.
